Every morning starts long before our sushi is ready to cut. Rice is prepared, ingredients are sliced, and a dozen fillings are organised before the first customer arrives. As a small team that has been serving our community for the last 16 years, efficiency matters — but never at the expense of quality.

One question we hear all the time is: “What are those machines in your kitchen?”

The answer is simple: we use two specialist Japanese machines that help support our daily process. They don’t replace the craftsmanship behind sushi making; they help us maintain consistency and freshness while allowing our team to prepare everything in time for the day ahead.

The Rice Mixer: The Foundation of Great Sushi

If there’s one thing that can make or break sushi, it’s the rice.

Our rice mixer plays a huge role in preparing both our sushi rice and bento rice. The machine evenly blends seasoning throughout each batch while gently fluffing and folding air into the rice. A process that could otherwise take hours by hand can be completed in around 30 minutes.

More importantly, it allows us to prepare fresh rice every morning.

Freshness has always been a key part of how we work. Preparing rice daily means we can offer products at their best, with the texture and flavour we want our customers to experience.

The Sushi Roller: Supporting a Busy Morning Routine

The second machine is undoubtedly the one that gets the most attention.

Our sushi roller has become an important part of Chef Yoyo’s morning routine. Every day we prepare more than 100 sushi rolls, and this machine helps us maintain consistency while keeping our process efficient.

There’s a common assumption that machines make sushi automatically, but that isn’t really the case.

The machine helps shape and speed up part of the process, but the skill behind the sushi remains very much human. The preparation of fish, slicing ingredients, balancing flavours and ensuring every roll looks and tastes right still depends on experience and attention to detail.
